Crock Pot Potato Soup

This is a variation of my mom's yummy crock pot potato soup....thanks, Mom!

8-10 potatoes, cubed
Chicken stock (enough to *almost* cover the potatoes in the crock pot)
1/2 onion, finely chopped
1 can cream of chicken soup (or mushroom)
1 small can of mushrooms
8 oz cream cheese

Mix all ingredients together (minus the cream cheese), cook in crock pot on high for 5-6 hours. About an hour before serving, mix in the package of cream cheese and gently stir.
Optional: cheese, bacon, chives, sour cream, etc. Serves 6. Enjoy!
