Gluten-free Mayonnaise Biscuits....Yum!

I have finally arrived at my first craving of this pregnancy. The bacon, egg, and cheese biscuit can't be beat by any other edible thing at this point (in my opinion).



Since I am gluten intolerant (this lovely condition arrived during my last pregnancy....love you, Stella!), biscuits aren't really an option for me anymore. And have you tried the gluten free breads, crackers, etc?? Blehh.

So when Thanksgiving arrived and I had nothing to put my leftover turkey (slathered with mayo) on, I set myself to making GOOD gluten free bread. I'm sure there are lots of decent recipes for gluten free loaf bread out there but honestly I am too cheap to spend the money on boxes and boxes of alternative flour to make one loaf of bread. Gluten free is PRICEY! So, the gluten-free mayonnaise biscuit is born. And it is heavenly.

Yes, love is sweet and so was this meal
 Ingredients:
-2 cups rice flour blend (I have found the Betty Crocker to be my favorite and it is cheaper than some of the others...pictured below)
-3 tablespoons baking powder
-1 teaspoon salt
-1 cup milk (buttermilk if you want to get fancy)
-6 tablespoons mayonnaise ( Duke's Mayonaise will always be the best)


Directions:
-Preheat oven to 400 degrees.
-Mix all ingredients. Stir until just combined. (If your mixture looks a little dry, add a little more milk. It needs to be creamy but not runny. This is crucial. Understood?)
-Scoop up a heaping spoonful at a time and slide it off onto a greased cookie sheet (I use a baking stone).
-Bake for 12 mins.

Enjoy! Now that I have found these, I may start gaining a little "baby" weight ;)
